Reason I''m asking is I am currently shopping to stock up my meat grinding/sausage supplies for the coming year seasoning and equipment maintenance items. The Weston 22 is a beast been using it for about 67yrs conservative guess 200lbs a year.

As long as it was heat treated correctly and you do everything correctly then the knife is fine. How many knives have you made, this is quite a common issue to come across while knife making.
